Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon fresh-ground pepper
  • 4 center cup pork chops
  • 8 oz fresh mozzarella, sliced
  • 1 pint cherry tomatoes, halved
  • 1 oz fresh basil leaves

Instructions

  • Preheat oven to 375°F.
  • Heat a cast iron grill pan over high heat.
  • Drizzle with olive oil.
  • Season pork chops with salt and pepper and place in hot grill pan.
  • Cook 4 to 5 minutes.
  • Flip pork chops and cook on second side for 3 to 4 minutes more.
  • Top each pork chop with slices of mozzarella.
  • Transfer to oven.
  • Bake for 12 to 15 minutes, or until cheese melts and pork chops are cooked through (internal temperature of 145°F).
  • Top with tomatoes and fresh basil before serving.
