Ingredients

  • 500 g beef mince
  • 1 onion
  • 1 tsp garlic
  • 425 g canned corn
  • 1 carrot diced
  • 1 zucchini sliced
  • 1 cup water
  • 2 beef stock cubes
  • 425 g canned chopped tomatoes
  • 450 g frozen spinach
  • 3 potatoes thinly sliced
  • 1 cup cheese grated
  • 1/2 cup cream

Instructions

  • Fry beef, onion and garlic until cooked.
  • Add carrot, corn, zucchini, water, stock cubes and tomatoes.
  • Simmer for 20 minutes, or until vegetables are cooked.
  • Place spinach in a microwave dish and cook for 5 minutes on high, then drain.
  • Peel and slice potatoes, set aside.
  • Grease a deep casserole dish and pour half of the beef mixture into the dish.
  • Place half of the spinach over the beef and then spread the sliced potatoes over the spinach, followed by half of the cheese.
  • Repeat steps, but finish with the cream and cheese on top.
  • Cook at 180C for 45 minutes.
