Ingredients

  • 1/2 cup pumpkin cold mashed
  • 2 bacon rashers cooked finely chopped
  • 1 tsp Parmesan large
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 cup cheese grated
  • 2 cup self-raising flour

Instructions

  • Preheat oven to 180C and grease muffin tins.
  • Sift flour into a bowl. Add parmesan and grated cheese to flour, and mix well.
  • Whisk egg, milk and oil together.
  • Add bacon and pumpkin to wet ingredients, mix well.
  • Add wet ingredients to dry ingredients, and mix until just combined. Do not over mix.
  • Spoon into muffin tins, and bake for 20 minutes.
