Ingredients

  • 227 g (8 oz) maple smoked bacon, cut into 1-inch pieces
  • 1 egg
  • 2 cups (500 mL) Bisquick* Mix
  • 3/4 cup (175 mL) shredded Cheddar cheese
  • 3/4 cup (175 mL) milk
  • 2 tbsp (25 mL) butter or margarine, melted
  • 1/4 tsp (1 mL) chili powder

Instructions

  • Heat oven to 400ºF.
  • Place paper baking cup in each of 12 regular-size muffin cups; spray paper cups with nonstick cooking spray.
  • In large skillet, cook bacon over medium-high heat, stirring frequently, until crisp.
  • Remove from skillet; drain on paper towel.
  • Meanwhile, in medium bowl, beat egg slightly.
  • Stir in remaining ingredients and bacon just until moistened.
  • Spoon batter evenly into cups.
  • Bake 16 to 19 minutes or until golden brown.
  • Immediately remove from pan to cooling rack.
  • Serve warm.
