Ingredients

  • 90 g butter melted
  • 2 cup self-raising flour
  • 1 cup plain flour
  • 1/2 tsp ground cinnamon
  • 3/4 cup caster sugar
  • 1 egg
  • 1 cup milk
  • 1/2 cup thick custard
  • 1/2 cup canned pie apple
  • 2 tbs brown sugar
  • 1/2 tsp ground cinnamon

Instructions

  • Grease a 12-hole muffin pan.
  • Combine butter, flours, cinnamon, caster sugar, egg and milk in a large bowl, and stir until just combined.
  • Halve the mixture and spoon into prepared muffin tins until approximately half full.
  • Using a teaspoon dipped in warm water, smooth the top of the mixture and make an impression in the centre.
  • Drop 1 heaped teaspoon of custard and 1 heaped teaspoon of apple into each well.
  • Top with remaining mixture and once again smooth tops with a teaspoon dipped in warm water.
  • Sprinkle with combined brown sugar and extra cinnamon.
  • Bake at 190C for approximately 25 minutes.
  • Turn out onto a wire rack to cool.
