All-Bran* Indian-Inspired Chickpea Burgers with Crispy Onions Recipe

Ingredients
175 mL or ¾ cup All-Bran Original* cereal
1 can (540 mL/19 oz) chickpeas
250 mL or 1 cup grated golden beets
3 large cloves garlic, minced
125 mL or ½ cup red onion, chopped
125 mL or ½ cup pine nuts
125 mL or ½ cup coarsely ground rolled oats (or oat flour)
45 mL or 3 tbsp curry paste
30 mL or 2 tbsp lemon juice
15 mL or 1 tbsp honey
Salt and pepper

Instructions
Preheat oven to 180°C (350° F). Line baking sheet with parchment paper.
In food processor, coarsely grind cereal; transfer to large bowl. Drain and rinse chickpeas; add to food processor. Process into very small pieces (or mash with a fork); add to cereal along with beets, garlic, onion, pine nuts, oats, curry paste, lemon juice honey, and salt and pepper to taste. Stir together until fully mixed.
Form mixture into 8 patties; place on prepared baking sheet. Bake for 30 minutes, turning halfway through cooking time. Sandwich patties in buns along with toppings: crispy fried onions, lettuce, cucumber, raita and chutney.
